Alaska Salmon Bake with Pecan Crunch Coating

"Baked salmon makes an excellent main course!" Ingredients 3 tablespoons Dijon mustard  3 tablespoons butter, melted  5 teaspoons honey  1/2 cup fresh bread crumbs  1/2 cup finely chopped pecans  3 teaspoons chopped fresh parsley  6 (4 ounce) fillets salmon  salt and pepper to taste  6 lemon wedges Directions Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

Delicious Salmon

"This salmon is so easy, you won't believe how delicious it is. I serve it with rice prepared with chicken broth and a little onion instead of plain water and buttery steamed broccoli with sliced almonds." Ingredients 1/3 cup   soy sauce 1/4 cup   olive oil 1/4 cup   brown sugar 2 teaspoons   lemon pepper 2 cloves   garlic, minced 1 pound   skin-on salmon fillet Directions Whisk together the soy sauce, olive oil, brown sugar, lemon pepper, and garlic in a shallow dish; lay the salmon fillets into the mixture with the skin side facing up. Allow to marinate in the refrigerator 4 to 8 hours or overnight. Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. "This was one of those recipes I created when I was cleaning out my spice cabinet! Everyone asks me for this recipe!" Baked Fish Sandwiches

"A simple fish sandwich that can be made with any white fish fillets. Served on toasted buns with steak sauce and Ranch dressing." Ingredients 1 pound   cod fillets 1 clove   garlic, minced 1   lemon, cut into wedges 2 tablespoons   butter, softened 1 pinch   salt and ground black pepper to taste 2 tablespoons   steak sauce 4   hamburger buns, split and toasted 2 tablespoons   Ranch-style salad dressing Directions Preheat the oven to 350 degrees F (175 degrees C). Place the fish fillets in a shallow baking dish. Sprinkle with garlic, and squeeze lemon juice over them. Dot with pieces of butter. Bake for 20 to 25 minutes in the preheated oven, until the fish flakes easily with a fork. Spread steak sauce on the cut side of the bottoms of the buns. Top with pieces of fish, then drizzle with Ranch dressing. Place the top buns over the filling, and serve.

Brown Sugar Meatloaf

"This is an easy tasty meatloaf. It tastes as good as it smells!" Ingredients  1/2 cup   packed brown sugar 1/2 cup   ketchup 1 1/2 pounds   lean ground beef 3/4 cup   milk 2   eggs 1 1/2 teaspoons   salt 1/4 teaspoon   ground black pepper 1 small   onion, chopped 1/4 teaspoon   ground ginger 3/4 cup   finely crushed saltine cracker crumbs Directions Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup. Bake in preheated oven for 1 hour or until juices are clear.
