"This is a wonderful alternative to those standard cinnamon-walnut-streusel coffee cake recipes. It's perfect for a brunch or a special family gathering. Alaska Salmon Bake with Pecan Crunch Coating

"Baked salmon makes an excellent main course!" Ingredients 3 tablespoons Dijon mustard  3 tablespoons butter, melted  5 teaspoons honey  1/2 cup fresh bread crumbs  1/2 cup finely chopped pecans  3 teaspoons chopped fresh parsley  6 (4 ounce) fillets salmon  salt and pepper to taste  6 lemon wedges Directions Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

"A friend of mine got this recipe while traveling in Italy. Chicken, mushrooms, and tortellini in rich cream sauce. Delicious! Serve sprinkled with parsley and cheese." Ingredients 1 teaspoon vegetable oil  1 rotisserie chicken, meat removed and chopped  1 tablespoon chili powder  1 teaspoon cayenne pepper  salt and ground black pepper to taste  12 flour tortillas  2 cups pico de gallo salsa  1/2 cup shredded Mexican cheese blend Directions Heat vegetable oil in a skillet over medium heat; cook and stir chicken, chili powder, cayenne pepper, salt, and black pepper together in the hot oil until chicken is heated through, about 10 minutes. "This is a moist chocolate cake with a hint of cinnamon. This recipe will make a large one layer cake or a two layer quarter sheet cake." Ingredients 2 cups all-purpose flour  1/4 cup unsweetened cocoa powder  2 cups white sugar  1 teaspoon baking soda  1 teaspoon ground cinnamon  1/2 cup margarine, softened  1/2 cup vegetable oil  1 cup water  1/2 cup sour milk  2 eggs  1 teaspoon vanilla extract Directions Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12x18 inch pan. In a large bowl, stir together the flour, cocoa, sugar, baking soda and cinnamon. Add the margarine, oil, water, sour milk, eggs and vanilla, mix until smooth. Spread evenly into the prepared pan. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool.

"These caramels are easy and WONDERFUL for anytime of the year! Everyone loves them! I can't make enough of them. You can omit the chocolate and just have wonderful caramels." Ingredients 1 cup butter  2 1/4 cups brown sugar  1 cup light corn syrup  1 (14 ounce) can sweetened condensed milk  1 teaspoon vanilla extract CHOCOLATE  1 pound milk chocolate  1 tablespoon butter Directions Grease an 8 x 8 inch square pan. In a heavy 4 quart saucepan melt butter over medium heat; add brown sugar, corn syrup and milk. Stirring constantly, heat to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and stir in vanilla extract. Pour into prepared pan. When caramel has cooled and set, cut into 1 inch squares. Chill in refrigerator until firm. "This recipe is very similar to a chicken dish served at a local well-known restaurant. A friend of mine was kind enough to share it. It includes chicken breasts topped with mushrooms, bacon and cheese cooked in a honey-mustard sauce." Ingredients 1 (8 ounce) package penne pasta  2 tablespoons olive oil  1/2 cup chopped onion  1 clove garlic, minced  3 cups chopped tomatoes  1 cup sliced fresh mushrooms  2 cups spinach leaves, packed  salt and pepper to taste  1 pinch red pepper flakes  8 ounces feta cheese, crumbled Directions Bring a large pot of lightly salted water to a boil. "If you'd never heard about pizza before and someone served this to you, I think you'd really enjoy it. Texture aside, the flavor of this final product was very pizza-like, and I'll be doing further experiments to be sure."
